Lately I’ve been on a bit of a salad and fruit kick. I kid you not — I woke up yesterday thinking “is it wrong to want salad for breakfast?” I’m quite certain there’s something wrong with me. I’m probably the one person in the world who has contracted some rare disease that makes one crave leafy greens constantly, (bit of a hypochondriac if you hadn’t noticed). Either way, it’s a good problem to have…let’s hope.
But back to the salads…
Pictured above is a delightful Balsamic Chicken and Summer Salad from Heather of ASweetSimpleLife.com. This recipe calls for chicken, balsamic vinegar, olive oil, garlic, peaches, romaine and arugula, strawberries, blueberries, raw almonds and Parmesan. Simple to prepare, this dish takes hardly any time to throw together, but the flavors are fantastically combined. You can make this salad for a quick dinner, or serve to guests along with some fresh bread and strawberry lemonade.
I also have to say — I’m a big fan of Heather’s blog. Her recipes range from Chipotle Garlic Salsa to Wineberry Muffins and even Apple Cider Ice Cream, which I had never even heard of. There’s truly something for everyone.
Pictured left is the delightful and innovative Orzo Caprese Salad from Jackie of DomesticFits.com. What I love most about this salad is the presentation. Sure, the ingredients are incredible, but how lovely would this dish be for a backyard dinner party?
The recipe calls for Orzo pasta, grape tomatoes, mozzarella balls, basil, pesto sauce, balsamic, salt, pepper and beefsteak tomatoes.
This dish can be easily customized to appeal to the gastronomic whims of each of your guests as well. While you mix up all the ingredients at once, you can make separate batches — one with basil, one without, etc. — in order to offer a variety.
And while this recipe is pretty impressive, Jackie offers a ton of fantastic dishes. Some of my favorite thus far are her Dark Chocolate Crème Brulee Tart, Boston Cream Pie Cupcakes, and last, but certainly not least, her 1 Minute Microwave Cupcake. Okay, so I may be craving leafy greens and chocolate this week. Story of my life. But after so many salads, I can eat some chocolate, right? Right! Enjoy!
